This week is slightly different, you could class this as my first ever guest post? Well.. kinda.. This bake challenge is actually bought to you by my other half Mr Wells. As you know I'm away on my holidays and unfortunately Joe has had to work so he wasn't able to come with me *Sigh* so he volunteered to take my place and have a go at this weeks bake challenge (Major boyfriend points have now been gained) So without further due take it away Wellsy!





What You Need
Base
  • 225g Crushed Digestive Biscuit
  • 75g Melted Butter
Filling
  • 450g Cream Cheese
  • 1 Vanilla Pod
  • 75g Sugar
  • 3 Eggs
  • 125g Crème Fraiche
Decoration
  • Whipping Cream
  • Raspberries 
Ready? Lets Bake
  1. Preheat oven to 170c / 325F / gas mark 3
  2. Mix the crushed digestive biscuits and butter together until thoroughly blended and then press into a 25cm spring form cake tin.
  3. Bake in the oven for 10 minutes.
  4. Using a large bowl, beat the cream cheese until soft and then beat in the vanilla essence & eggs until well blended.
  5.  Add the sugar and crème fraiche and continue to beat until well mixed.
  6. Spoon the filling onto the base. Put back into the oven at the same temperature & bake for approx 25 – 30 minutes.
  7. Cool and chill for 2 hours before removing the cake from the tin.
  8. Pour Whipping cream into a bowel and whip untill soft peaks form, Place in piping bag and pipe onto the cheesecake
  9. Add The Raspberries
