Its that time again! Time for another #GreatBloggerBakeOff and this week the challenge was to bake cookies! Now I must confess, I've never made cookies before - well not unless you can count Scoobie Doo packet bakes.. So I had to get a bit of help from trusty google! These cookies didn't turn out perfect aesthetically, I wanted them to be darker - Should of added more cocoa powder. However taste wise they are amazzzzzzzzzzing, super soft in the center but crunchy on the outsides with a yummy blend of dark and white chocolate, now all I need is a big mug of tea to enjoy them with. Bon appetit!



Ingredients

  • 170g Unsalted Butter (Room Temperature)
  • 150g Dark Brown Sugar
  • 50g Granulated White Sugar
  • 1 Large Egg
  • 2 tsp Vanilla Extract
  • 250g Plain Flour
  • 1tsp Baking Powder
  • 1/2 tsp Salt
  • 125g Milk Chocolate, White Chocolate and Dark Chocolate

Ready? Lets Bake

  1. Get a big bowl, add your butter
  2. Using a hand mixer or wooden spoon beat for a minute until smooth and creamy
  3. Add the brown and white sugar until fluffy and light in colour
  4. Mix in the egg and vanilla 
  5. Melt the Milk chocolate and add to the mix - Blend in well
  6. In a separate bowl combine the flour, baking powder and salt, slowly mix this mixture with the wet mix
  7. This mixture will be thick, Break up the white and dark chocolate and combine with a spoon into the mix

  1. Cover this mixture with foil and place it in the fridge for about an hour
  2. Set your oven to Gas Mark 4 (180C - 350F)
  3. Remove from the fridge allow to sit for about 10 minutes 
  4. Cover baking trays in Parchment paper
  5. Roll the cookie dough into Tbsp sized balls
  6. Bake for 15 minutes
  7. They will come out very soft, but allow to cool for about 30 minutes and they will harden.
  8. Make a cup of tea and enjoy!
