What You Need
  • 1 Tablespoon Cinnamon 
  •  225g Butter (Room Temp)
  • 4 Large Eggs (Room Temp)
  • 250g Plain Flour
  • 1 Teaspoon Baking Powder
  • 1 Teaspoon Vanilla Extract 
  • 300g White Sugar
  • 6 Large Apples (I used Golden Delicious)  
Ready? Lets Bake
  1. Start by preheating your oven to Gas Mark 4 (180°,160 Fan)
  2. Line the Bottom and sides of a 9 Inch Springform pan with baking paper
  3. In a large bowl combine 100g of Sugar with 1 Tablespoon of cinnamon, add the baking powder, salt and Flour and mix with a wooden spoon
  4.  Now peel and quarter the apples and cut in to thin slices, put to one side
  5. In a separate bowl beat together the butter and sugar until its smooth, add the eggs in one at a time continually on at a slow speed, add the vanilla extract, sieve the flour and add in slowly to the wet mixture, add in the other mixture.
  6. Now add in half of the apples to the mixture, pour the batter in to the pan
  7. Arrange the other half of the apples on the top of the mixture. 
  8. Sprinkle with sugar and a touch of cinnamon
  9. Put it in the oven on the middle shelf and cook for 1hr 25mins, in the last 25mins cover with foil (So the top crisps up)
  10. Once its cooked (Check the center of it with a knife, it should come out clean) cool on a rack, serve with a dollop of whipped cream or vanilla ice-cream. Enjoy!  

Okay so Its not the prettiest of cakes, but oh my does it taste good - Perfect for a cold winter evening, served with a nice cup of tea. Yummy!
