In England we do two primary things with these fleshy orange squashes, we carve faces into them or smash them at fairs but After last weeks Pumpkin Soup Recipe I got thinking what else I could do with a Pumpkin, After a quick Pinterest browse - I say quick, I got trapped on there for a good afternoon, its just so addictive and pretty! I chose to bake an American Classic 'The Pumpkin Pie'. It took awhile for me to get my head around pumpkins being a sweet dish, it took me awhile to even eat a carrot cake! But I was surprised just how tasty this dish is despite its slightly peculiar appearance, I ended up making two.. as admittedly I ate the first one.. so If your in the mood to change your mind about pumpkins read on..

What You Need

Pumpkin Pie - Serves 6

  • 1 Kg Cooking Pumpkin 
  • 1 Can Evaporated Milk
  • 1/4 Tsp Ground Nutmeg
  • 1/4 Tsp Ground Ginger
  • 1/4 Tsp Ground Cinnimon
  • 6 Tbsp Caster Sugar
  • 3 Large Eggs
  • Double Cream
  • Shortcrust Ready made Pastry

Ready? Lets cook

  1. Preheat the Oven to 200c / 400f / Gas 6, Roll the pastry out to a thickness of a pound coin. Get a 22cm loose bottom tin (I only had two 9 Inch tins so I used them) Rub butter around them and drape the pastry over
  2. Blind bake for 20 Minutes set aside
  3. Lay the de-seeded and quartered pumpkin into a baking tray, cover tightly with tin foil and bake for 45 minutes reduce the oven to 180c / 350f / gas 4
  4. Allow the pumpkin to cool, then scoop out the flesh - Put in a food processor or blend with a hand blender, blend until smooth
  5. Place in a bowl, add the sugar and eggs - whisk and slowly add the condensed milk 
  6. Add in the spices and continue whisking
  7. Add this mixture to the pastry case and cook for 45 Minutes
  8. Once cooked allow it to rest in the oven for roughly 2 hrs
  9. Serve with cream or ice cream and its good to go!
