Star Topped Mincepies Christmas

I know I'm a little pre mature with the Christmas baking, but honestly with the influx of Christmas ads and Decorations I just couldn't resist. Mince pies alongside a nice warming glass of mulled wine is xmas personified (I'll be posting a mulled wine recipe soon!) 
I've also already brought out my Santa jumpers and snowflake pajamas, Ridiculous I know but it had to be done. These mince-pies are really easy to make; as I bought ready made pastry 'Hallelujah!' its just a matter of making the mincemeat and filling up the pastry cases - Hope you like them :)

What You Need

  • 2 x Ready Rolled Shortcrust Pastry
  • 1 x Egg
  • Cake tray 
  • Crinkle pastry cutter
  • Star pastry cutter

The Mincemeat

  • 75g Soft Brown Sugar
  • 75g Currents
  • 75g Raisins
  • 30g Dried Cranberry's
  • 1 Tsp Cinnamon 
  • 1 Tsp Ground Ginger
  • 1/2 Tsp Ground Cloves
  • Zest and Juice of a Clementine 
  •  25ml Brandy
  • 1/2 Tsp Vanilla

TIP. You can pre-make the mincemeat, just place it in sterilized jars and it can be kept for up to 6 months

Ready? Lets Cook

  1. Soak the Raisins and currents in the brandy and clementine juice for 1hr until plumped up
  2. Add in the rest of the ingredients and mix well
  3. Pre heat the oven to 180fan 
  4. Roll out the pastry (Thickness of about 1/4 cm) cut out the pastry cases
  5. Put the cut outs into the cake tray and fill with about a tsp of mincemeat
  6. Cut out the stars and place on top, brush with the egg
  7. Bake for 13/15 minutes, until they're starting to brown
  8. Enjoy :)
