Good morning star bakers, sorry too much Masterchef.. Today's my birthday! We've celebrated by baking a ummm.. festive loaf? My fiancee has recently been introduced to the wonderful world of pinterest and came across this rather gorgeous looking loaf, or shall I say wreath? Baked by the very talented Sommer from a Spicy Perspective we decided we would have to give it a go. We've changed it slightly from the original and upped the cinnamon, loosen your belts and brace your selves for some serious carb overload!

...What You Need

  • 1 x 7g Packet of active yeast
  • 1/2 Cup warm water
  • 1 x Tbsp Warm water
  • 3/4 Cup Whole milk 
  • 1 x Large egg
  • 1 1/2 Tsp salt
  • 4 x Cups Plain flour
  • 4 Tbsp melted butter
  • 3 Tbsp Brown sugar
  • 4 Tsp Cinnamon
  • 1/2 Tsp Ground Nutmeg
  • 1/2 Tsp Sea Salt

...Lets Bake! 

  1. Add the milk to a small pan, turn the heat up high and scald the milk. Bring to the boil and then allow to completely cool again (I put it in the freezer to get it to cool quicker) Don't be tempted to skip this step, your bread may not rise
  2. Add the warm water (About room temp) to a large mixing bowl, add the sugar and yeast and allow to foam for about 10 minutes
  3. Then either by hand or with a machine mix the mixture and add the cooled milk, egg and salt. Slowly start incorporating in the flour
  4. Once its all mixed add in the melted butter, take out the dough and place on a lightly oiled surface and knead the dough for about 10 minutes (You want it to be smooth and stretchy) 
  5. Once youv'e reached the right consistency place the dough In a clean, lightly oiled large bowl. Cover with cling film and set it aside for 2 hrs until its double/tripled in size
  6. Now your ready to make the heavenly scented cinnamon paste, In another bowl (Sorry for all the washing up) Place in your cinnamon, nutmeg, brown sugar and sea salt and give it a good mix, set aside.
  7. Pre heat your oven to 180c / Gas mark 4
  8. Once the dough as risen take it out of the bowl and place it onto your lightly oiled work surface again, roll it out into a large rectangle about a 1/4 of a inch thick
  9. Sprinkle your cinnamon mixture all over
  10. Roll up the dough like a giant sausage, now take a sharp knife and divide the dough into two horizontally so you have two long sausages. 
  11.  Place the two pieces of dough paralell to each over and twist the pair together like a rope
  12. Place this wreath shape onto a baking tray lined with parchment paper and bake In the oven for roughly 25 - 30 minutes until the top has browned. 
  13. Wait for at least 15 minutes before serving. Optional Sprinkle with icing powder or even drizzle with icing.

This bread is perfect for christmas and will make your house smell good enough to eat. I promise you it's not as hard as it may look, it just requires a bit of patience to let it prove and a strong arm to knead it. Its a great bread to customise for your own tastes, for example you could add raisins to the mixture? Or like Sommer did chocolate! I might even bake it again and try it with a mince pie filling.... heaven!
